Tomato and Garlic Sauce

Makes about 3½ cups

  • 3 tbsp olive oil
  • 1 cup finely chopped onion
  • 1 tbsp garlic, pressed or finely chopped
  • 3 cans (14.5 oz each) diced tomatoes
  • 1 can (6 oz) tomato paste
  • ¼ cup chicken stock
  • ¼ cup red wine (or less)
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 2 medium–large bay leaves
  • 1½ tsp sugar
  • ½ tsp salt
  • Freshly ground black pepper to taste

Warm the olive oil in a 3–4 quart saucepan over medium heat. Add the onion and cook until soft and translucent, about 5–8 minutes, stirring frequently. Add the garlic and cook for 1–2 minutes, stirring constantly to prevent browning.

Stir in the tomatoes (with their liquid), tomato paste, stock, wine, herbs, sugar, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer uncovered for 1–1½ hours, stirring occasionally.

The finished sauce should be thick and fairly smooth. Remove the bay leaves. For an even smoother texture, puree in a food processor.


Italian Sausage

  • 5 Italian sausage links (mild or hot)
  • ½ cup chicken stock
  • Red and/or yellow peppers, cleaned and cut into strips
  • Olive oil
  • Oregano

Preheat oven to 350°F (175°C).

Pour the chicken stock into a baking dish and nestle the sausages into the liquid. Bake for 30 minutes.

Turn the sausages, then layer the pepper strips on top. Sprinkle with oregano and drizzle lightly with olive oil. Bake for another 30 minutes.

Leftover sausage freezes well. Use it later for sandwiches on crusty rolls, smothered in the tomato sauce. Serve with French fries for an easy, satisfying meal.


Pasta

Select your favorite brand — Barilla rigatoni works beautifully with this dish.

Cook according to package directions. Add a splash of olive oil to the cooking water to help prevent sticking.

Cook until al dente, drain well, and serve with Parmesan cheese on the side.

  • 4 pepperoncini

Whisk together the olive oil, vinegar, and lemon juice. Season with salt and pepper.

Tear the lettuce into bite‑size pieces. Add tomato and green onion, then toss gently with the dressing.

Transfer to a serving bowl. Top with olives and pepperoncini. Sprinkle with Parmesan cheese and serve.

*Frozen lemon juice (such as Minute Maid) keeps for weeks in the fridge and works perfectly in dressings.
